chilli willi



this past weekend boyfriend and i made a delicious onion-less chilli. i am so the type of cook who does not play by the rules: i never follow a recipe, i cook with whatever ingredients i have and i am always going with the flow (probably why i am not the best baker). boyfriend however is the complete opposite. he is totally regimented, follows all recipes to a tee and is a methodical chef. perfect team i would say. this weekend we made chilli but had no onions! well in his eyes the chilli would not be a chilli without them but i think our improvisation worked out great and the chilli was divine.

recipe
-two cans red kidney beans
-two packs of regular ground beef (always opt for lean if available)
-4 crushed cloves of garlic
-three sliced carrots
-one can of corn
-two tablespoons of chilli powder (or to taste)
-two table spoons of chilli flakes (or to taste)
-one tablespoon of cinnamon (or to taste)
-salt and pepper to taste


on a medium low heat heat chilli powder, flakes and cinnamon in a large cooking pot with a couple table spoons of olive oil. toss in carrots, garlic and corn and cook until carrots are soft. add beef and season with salt and pepper. cook slightly for a couple minutes then add beans and turn to a low simmer. add a cup of water if you like a smooth consistency. cook for 30 minutes and enjoy <3
