eating on a budget


one of the most challenging parts of being at school is eating. if you are like most students, you are always purchasing while conscious of a budget. if you are like most young women, you are always watching your waistline and if you are like most normal people, you want to want to eat something that tastes good. normally i cook with a lot of fresh ingredients and produce like fruit and veg, inexpensive canned foods like lentils and chickpeas as well as with plenty of low fat dairy products like skim milk and yogurt. today i made a little something that is quick, inexpensive and healthy. 

chickpeas and red peppers in caramelized onions with goat cheese

  • half a can of chickpeas
  • half a red pepper
  • one onion
  • dash of parsley 
  • salt and pepper to taste
  • one tbsp of sugar
  • one dash of dijon mustard
  • olive oil for sautéing 
  • one tsp crumbled light herbed goat cheese (a bit of a splurge for a student but you can use light feta or mozzarella if you prefer)
sauté onions with salt, pepper, parsley, and sugar on med high for 15 mins or so until tender and caramelized. add chickpeas and pepper and let ingredients merry for a few moments before adding the mustard. when all ingredients are well coated with the sauce of the onions, turn off heat pour into a bowl and top with goats cheese. voila!
